Ingredients
- Strawberry syrup:
- 3 cups strawberries, hulled and quartered
- 1/4 cup sugar
- Blueberry syrup:
- 2 cups (9oz) blueberries
- 1/4 cup sugar
- Mint syrup:
- 1/3 cup sugar
- 1/3 cup water
- 1/2 cup packed fresh mint
- Cows:
- 3 tbsp syrup
- 2 scoops vanilla ice cream
- 1/2 cup seltzer

Preparation
Step 1
Make syrup:
Strawberry: Stir together strawberries and sugar in a double boiler. Cook, stirring, until sugar dissolves and berries release their juices, 15-20 minutes. Strain syrup and discard solids. Refrigerate until cool.
Blueberry: Stir together blueberries and sugar in a small saucepan over medium heat. Cook, stirring, until sugar is dissolved and berries release juices, 10-12 minutes. Strain syrup and refrigerate until cool.
Mint: Bring sugar and water to a boil in a small saucepan, cook until sugar dissolves. Let cool. Prepare an ice water bath. Bring a small pot of water to a boil. Add mint, cook until vibrant green, 30 seconds. Remove from water, and transfer to ice water bath. Drain, squeeze out water. Puree mint and syrup in a blender until smooth. Let stand for 15 minutes. Strain, then refrigerate until cool.
Cows: for each- pour 2 tbsp syrup into a chilled glass. Add 2 scoops ice cream, drizzle with 1 tbsp syrup, top with 1/2 cup seltzer and stir.
