Waldorf Salad

Use whatever eating apples are in season: Newton or Granny Smith for green; McIntosh, Delicious or Spartan for red. Swiss, Colby or brick cheese go well with this salad. Toast the almonds in a 350º oven for 10 minutes for a better flavour.

Ingredients

  • 1 green eating apple
  • 2 red eating apples
  • 1 tblsp lemon juice
  • 1 cup diced celery
  • 1 cup seedless grapes, halved
  • 1/2 cup grated mild cheese
  • 1/4 cup mayonnaise
  • 1/4 cup whipping cream
  • 1/2 cup coarsely chopped almonds
  • I also add a handful of dried cranberries

Preparation

Step 1

Wash and core apples, but do not peel. Dice into large bowl; sprinkle with lemon juice. Add celery, grapes and cheese; toss.

Combine mayonnaise with cream. Pour over salad and toss to coat. Refrigerate until serving time. Add almonds just before serving and toss again.
