Ingredients
- 8 oz Ground Chuck
- 1 1/3 Cups Green Pepper, chopped ( approx 1 large )
- 1 Cup Onion, chopped ( approx 1 large )
- 2 cloves garlic, minced
- 2 TBSP Chili Powder
- 1 tsp Cumin, ground
- 1 ) 28 oz can Stewed Tomatoes, cut into large pieces and undrained
- 1 ) 14 oz can Chicken Broth
- 1 ) 8 oz can Tomato Sauce, no sugar added
- 1 ) 15 oz can Black-Eyed Peas, rinsed & drained (do not use in Active Phase)

Preparation
Step 1
In a large saucepan, cook beef, pepper, onion and garlic over medium heat for 4 to 5 minutes or until beef is brown and vegetables are tender; stir occasionally. Drain off fat, if necessary.
Stir in chili powder and cumin into beef mixture in saucepan. Cook for 1 minute. Add undrained tomatoes, chicken broth and tomato sauce. Bring mixture to boiling; reduce heat. Simmer, partially covered, for 15 minutes. Stir in drained black-eyed peas and heat through. To serve, ladle chili into bowls.
Makes 5 servings
Note: 2 TBSP Chili powder is a generous amount, if you think it will be too much, start with less.
