Ingredients
- 15 jalapenos, preferably red, cut in 1/2, seeded and deveined
- 1 Tbs. canola
- 1 lb. mild Italian sausage, casing removed
- 2 Tbs. minced red onion
- 2 Tbs. minced red bell pepper
- 1 1/2 Tbs. minced garlic
- 1/2 c. mascarpone or cream cheese
- 2 Tbs. grated Parmesan, plus more for garnish
- Salt and pepper
- 1/2 c. chredded mozzarella

Preparation
Step 1
Preheat oven to 350 degrees. Place jalapenos on a sheet tray and roast 10-20 minutes. Remove from oven and let cool.
Heat the oil in a saute pan. Add the sausage and cook for 5-7 minutes. Add the onions, peppers, and garlic and cook to soften for about 5 minutes. Remove from pan; cool; then add mascarpone and Parmesan. Mix thoroughly and season with salt and pepper.
Place approximately 1 Tbs. into each jalapeno half and top with 1/2 tsp. mozzarella cheese. Broil until cheese melts.
