Ingredients

  • 2 grilled/boiled chicken breast halves
  • 1/2 of a small onion, chopped
  • 2 poblano peppers
  • 3 fresh garlic pieces
  • 1/4 to 1/2 cup chicken broth
  • 2-3 oz cream cheese
  • 3 tsp cumin
  • 2 tsp dried cilantro
  • 2 tsp coriander
  • 1 tsp chili powder
  • 1 tsp paprika
  • salt and pepper to taste
  • 1/3 cup mexican blend cheese grated

Step 1

Lay poblano down, Gentle remove the top then. Slice 1/4 off the poblano from the top to the end to make it like a bowl. Then chop up the slice into small pieces. Remove the seeds and the membrane if you don't want it spicy.

Add the chopped poblano, onion, chopped garlic and 2 tsp oil to a non stick skillet. turn on heat to low and saute. when onion start to soften add all the spices, chicken broth and the cream cheese. Let it simmer till the liquid is thick. Add more of seasonings if needed.

Char the skin of the poblano directly on the stove over the gas flame or broil them in the oven till just browned. You want the pepper to still be crisp tender, not mushy.

place poblano on a broiler pan. Stuff the peppers with the chicken filling. Add grated mexican blend cheese to the tops.

Broil till the cheese is melted. Serve
