Custard and Pear Pudding

Ingredients
- FOR CUSTARD:
- 6 1/2 oz canned pear halves, cubed
- 5 tblsp unsalted butter, softened
- 6 tblsp sugar
- 1 egg
- 1/2 cup plus 1 tblsp all purpose flour
- a drizzle of honey
- 2 large egg yolks
- 1 tblsp pure maple syrup
- 1 heavping teas cornstarch
- 1 teas pure vanilla essence
- 1 1/4 cups whole milk or enriched soy milk

Preparation
Step 1
1. Preheat the oven to 375.
2. Divide the chopped pears between 6-8 small bowls or ramekins. Cream the butter and sugar until pale. Add the egg, beat well, then fold in the flour.
3. Divide the mixture between the ramekins, place the ramekins onto a large baking sheet, and bake in the preheated oven for 20-30 minutes.
4. Meanwhile, to make the custard, beat the egg yolks, maple syrup, cornstarch, and vanilla essence in a heatproof bowl. Put the milk in a saucepan and heat gently until warm. Pour into the egg mixture. Stir, return ot the pan, and keep stirring over low heat until the mixture coats the back of a spoon or reaches your desired consistency.
5. Remove the pear puddings from teh oven and let cool for a few minutes, then serve warm with the custard.
