Ingredients
- 1 chicken cut in pieces
- 1/4 c. poultry cajun magic
- 1/4 c. canola oil
- 6 cloves garlic, chopped
- 2 large onions, chopped
- 2 green peppers, chopped
- 2 4 oz. cans chopped green chilies
- 2 15 oz. cans Mexican style stewed tomatoes
- 2 3 lb. cans great northern beans, undrained
- 1 15 oz. can chicken broth
- 2 tsp. ground cumin
- 1 tblsp. chili powder
- 1 small can chipotle chilies in adobo sauce, chopped
- fresh cilantro

Preparation
Step 1
1. Rub cajun seasoning all over chicken.
2. Grill chicken on BBQ using indirect heat or in the oven using a covered brick to weigh down chicken, about 45 minutes.
3. Turn chicken, replace brick & continue cooking another 45 minutes.
4. Heat oil in dutch oven.
5. Saute garlic, onions & green pepper until tender.
6. Add remaining ingredients (except cilantro) & simmer uncovered 45 minutes, stirring often.
7. Remove meat from chicken, cut into chunks & add to dutch oven.
8. Cook 15 more minutes or until chicken is hot.
9. Garnish with cilantro.
