Ingredients

  • 1 jumbo can buttermilk biscuits (8 biscuits)
  • 6 eggs
  • 1 lb. Spicy breakfast sausage
  • 2 cups frozen potatoes O’Brian
  • 1 Cup grated cheddar cheese
  • Salt and pepper

Preparation

Step 1

1. Spray pan with baking spray or coat with oil and a little flour.
Flatten out four biscuits and place in bottom of pan overlapping
a little and going some up the sides.

2. Brown sausage, drain. While meat is draining lightly brown
potatoes in 1 Tbs. oil. Add sausage on top of biscuits in pan.
Add potatoes on top of meat.

3. Beat eggs and cheese, salt and pepper till mixed well.
Pour this over potatoes in pan. Flatten our remaining biscuits
and cover top completely, remembering to overlap biscuits a little.

4. Bake at 350 degrees for 40 min until eggs are well set. Remove
from oven and let stand 10 minutes. Invert pan onto platter.

Can be reheated in microwave or oven.
