- 2 small potatoes
- vegetable oil

Preparation
Step 1
Pare potatoes, cut in 1/8" slices, then 1/8 " strips. Drop in ice water; let stand 30 minutes. Drain and pat dry on paper toweling.
In medium-sized saucepan, add oil to 1 1/2" depth. Heat to 375 degrees on deep fat-frying thermometer, or until cube of bread browns in 30 seconds.
Drop in potatoes, half at a time.
Fry until golden brown, about 4 minutes. Remove with slotted spoon to paper toweling to drain. Sprinkle with salt.
Note: Potatoes may be prepared a few hours in advance. Heat in preheated 300 degree oven 5 minutes, or until heated through.
