Ingredients

  • 8 chicken breast halves, skinned and boned
  • 1/4 cup butter
  • 1/3 cup honey
  • 1/4 cup Dijon mustard
  • 1 clove garlic, crushed
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • Rice, freshly cooked

Preparation

Step 1

Preheat oven to 350. Butter 9 x 13 ovenproof glass baking dish. Arrange chicken in prepared dish. Set aside. Melt butter in medium saucepan over medium heat. Add next 7 ingredients and whisk until smooth. Pour over chicken. Cover with foil and bake 10 minutes. Uncover and baste with sauce. Continue baking uncovered, basting occasionally until chicken in opaque and juices run clear when pierced with tip of sharp knife 10-15 minutes. Serve hot passing rice separately
