Ingredients
- Make a day ahead
- 5 chicken breasts
- 1 box Rice A Roni - chicken flavor
- 1 bunch green onion
- 3/4 can sliced black olives
- 2 jars marinated artichokes (save oil)
- 1/2 cup mayonnaise

Preparation
Step 1
Boil chicken and cut into bite sized pieces. Chop green onions (use some of the green stems), cut artichoke hearts in quarters. Add chicken, onions, artichoke hearts and olive to prepared Rice-A-Roni. Add the saved oil from the 2 jars of artichokes to the mayonnaise and combine. Shill and pour over the chicken salad right before serving.
