Ingredients

  • 2 ripe avacado
  • 1 c. fresh or jarred salsa
  • 2 tsp oil
  • 1 red pepper, chopped
  • 1 c. shredded carrots
  • 1/2 tsp ground cumin
  • 1 can (15oz) black beans, rinsed
  • 1/4 c. chopped cilantro
  • 4 whole wheat wraps
  • 4 c. coursely chopped lettuce

Preparation

Step 1

Remove pit and peel avacados. Coursely chop 1 avacado, mash the other in a small bowl.
Add in 1/4 c. salsa and stir until well blended; cover with plastic wrap and set aside.
Heat oil in medium skillet over med-high heat. Saute pepper and carrots, about 3 mins. Add cumin and cook another 30 sec. Add beans and 3/4 c. salsa; heat through. Stir in chopped avacado and cilantro
Spread about 3 Tb of smashed avacado mixture on each wrap. Top with 1 c. lettuce. Spoon 1 c. bean mixture on top of lettuce.
Roll wrap and enjoy
