Ingredients

  • 2-4 Tablespoons peanut oil
  • 2-3 pound chicken,
  • cut into serving pieces
  • 2 finely chopped yellow onions
  • 1 cup peanut butter
  • 1 cup + 3 cups water
  • 16 ounce can stewed whole tomatoes
  • salt & pepper to taste
  • 1/2 teaspoon cayenne pepper
  • 2 cups finely chopped cabbage
  • 3 coarsely chopped carrots
  • 3 sweet potatoes,
  • peeled and coarsley chopped
  • 2 peeled and coarsely chopped turnips
  • 12 whole okra pods

Preparation

Step 1

Preheat oven to 200 degrees. Heat the oil at medium-high in a large heavy pot, such as a Dutch oven. Fry the chicken pieces, a few at a time, until golden brown, about 5 minutes per side. Remove chicken to platter, place in oven. If needed, add 2 more Tablespoons oil to the pot, and fry the onions, stirring, until soft, about 3 minutes. Reduce heat to medium, and add peanut butter, 1 cup water, and stir well. Add 3 more cups water, then the tomatoes, cabbage,carrots, sweet potaoes, turnips, and okra. Cover and cook 25 minutes, or until tender, reducing heat to simmer if needed.
