  • SAUCE:
  • 1 1/4 lb. ground beef (80% lean)
  • 1 1/4 lb. ground pork
  • 2 cups panko bread crumbs
  • 1 cup finely chopped yellow onion
  • 1 egg
  • 1 tea. worcestershire
  • 1 tea. granulated garlic
  • 1 tea. dried tarragon
  • 1 tea. salt
  • 1 tea. pepper
  • 1/2 cup bbq sauce
  • 1/4 cup ketchup

Step 1

Combine meatloaf ingredients. Divide the mixture in half and form into 2 loaves (each about 4" wide by 6-7" long). Place loaves on a sheet pan.

Prepare the grill for indirect cooking over medium-low heat (about 300 degres)

In a small bowl, mix sauce ingredients. Set aside half of the sauce to serve with the meat loaf. Top each meat loaf with 3 Tbsp. of the remaining sauce and coat thoroughly.

Using metal spatula, gently pick up each loaf from the sheet pan and place directly on the cooking grate. Grill meat loaves over indrect medium-low heat with lid closed, until thermometer registers 155 degrees (50-60 minutes).

Remove loaves from the grill and let rest 10-15 minutes. Cut into 1/2" slices and serve with reserved sauce.
