Ingredients

  • 3 cups chicken broth
  • 1/4 cup arborio rice
  • 2 eggs
  • 2 tbsp. lemon juice
  • 2 tbsp. fresh dill

Preparation

Step 1

Cook rice in broth with dill and a pinch each of salt and white pepper until tender and beginning to break down, about 20 - 25 minutes.

Beat eggs with lemon juice.

Add a couple of small ladles of the broth to the bowl with the eggs, whisking constantly. Add the egg mixture back to the broth, again whisking constantly and cook for a couple of minutes just to cook the egg. DO NOT BOIL or it will curdle.

Remove from heat, cool to room temperature and chill overnight.

To serve, garnish with additional chopped fresh dill and lemon.
