Ingredients

  • 5 ounces graham cracker crumbs, or 1 1/4 cups
  • 2 tablespoons sugar
  • 1/4 cup oil, or melted margarine
  • 15 ounces fat free ricotta cheese
  • 3/4 cup nonfat sour cream
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 2 eggs, separated
  • Zest of 1 lemon, optional
  • 1 teaspoon vanilla
  • 1/2 cup plain nonfat yogurt
  • 1 cup nonfat sour cream
  • 3 tablespoons sugar
  • 1 teaspoon vanilla

Preparation

Step 1

Crust:
Mix graham cracker crumbs with sugar and oil. Pam a 9 inch springform pan. Press crumb mixture on bottom. Bake 350 for 8 minutes. Let cool completely, leaving oven on.

Filling:
Beat cheese and sour cream on low speed until smooth. Gradually beat in sugar. Add flour, egg yolk, vanilla and lemon. Whip whites until stiff. Fold into cheese mixture. Remove from oven for 15 min. Increase oven to 425.

Topping:
Pour off any liquid from yogurt. Mix yogurt, sour cream, sugar and vanilla. Spoon evenly over crust. Bake 7 min at 425. Cool at room temp. Cover and refrigerate for 2 hours.
