Ingredients

  • 3 lbs. small to medium-size new potatoes
  • 2 . TBSP. butter
  • 2 cloves garlic, finely chopped
  • 2 TBSP. finely chopped parsley
  • 1 tsp. chopped fresh thyme
  • 1/2 tsp. chopped fresh rosemary
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Preparation

Step 1

1. Preheat oven to 375 degrees
2. Bake potatoes on baking sheet for 1 hour, 15 minutes or until potatoes are baked through. Set aside for 15 minutes to cool.
3. Melt butter in a small skillet over low heat. Add the garlic; cook for 2 minutes or until garlic starts to brown lightly. Add parsely, thyme, rosemary, salt, and pepper; stir mixture to combine and remove the skillet from heat.
4. With a paring knife, cut an "x" in the top of each potato. Squeeze potato together from 2 opposite sides, pushing the inner pulp toward the top. Spoon a little melted butter into each potato. Bake 5 minutes longer and serve.

Note: Potatoes can be baked a day ahead without the butter and split open. Reheat potatoes, covered, in a 375 degree oven for 10 minutes. Uncover potatoes, drizzle with butter and bake for another 15 minutes.
