Ingredients

  • 1/4 C softened butter
  • 1 2/3 C packed brown sugar
  • 4 egg whites
  • 2 eggs
  • 3/4 C strong brewed coffee
  • 1/2 C lo fat vanilla yogurt
  • 1/4 C canola oil
  • 1 T vanilla
  • 1/4 tsp peppermint extract
  • 3 1/2 C flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 C buttermilk
  • 1 C mini chocolate chips(6 oz)

  • Topping
  • 1/3 C vanilla chips
  • 1 -2 T butter or margaaring
  • 3 tbsp crushed peppermints or cany canes (opt)

Preparation

Step 1

- Beat butter and brown sugar until crumbly; add eggs and whites, coffee, yogurt, oi.l and extracts; blend well
- Combine dry ingredients; add alternately with buttermilk, beating well after each addition; fold in chips
- Fill 3 8X4 inch spraayed loaf pans; bake at 350 for 50 - 55 min until toothpick comes clean; coll 10 min and remove from pans
- When cool, melt chips and butter - may add food coloring if desired; stir until smooth and drizzle over loaves, Sprinkle with candies
