Ingredients

  • 12 boneless skinless chicken thighs
  • 1 envelope taco seasoning mix
  • 6 -inch corn tortillas
  • 10 -inch flour (whole wheat if desired) tortillas
  • Canned black beans, drained and rinsed
  • Shredded iceberg lettuce
  • Shredded Cheddar cheese
  • Chopped tomatoes
  • Chopped green onions
  • Chopped cilantro
  • Sour cream

Preparation

Step 1

Place chicken in a slow cooker. In a bowl, combine tomatoes and taco seasoning mix; pour over chicken. If tomato liquid does not cover the chicken, add water to cover. Cover slow cooker and cook on HIGH for 3 to 5 hours. Using two forks, shred the chicken right in the slow cooker and blend into the juices. Just before serving, preheat oven to 350 degrees. Wrap corn and flour tortillas separately in aluminum foil wrap; heat in oven for about 20 minutes. Serve chicken and tortillas with garnishes.
