Ingredients

  • 10 oz/285g plain flour
  • 4 level tsp baking powder
  • Pinch of salt
  • 1 tbsp caster sugar
  • 4 oz/110g chilled unsalted butter, cut into small pieces
  • 2 tsp clotted cream and enough cold milk to bind the dough
  • 2 oz/55g sultanas (optional)
  • One egg, beaten, for glazing
  • 1 tbsp icing sugar, for dusting

Preparation

Step 1

Heat the oven to 180C/350F/gas mark 4. Sift the flour, baking powder, salt and sugar into a large bowl and mix together. Rub the butter in quickly by hand and bind to a dough with the milk and clotted cream.

Lightly knead on a cool, floured work surface and add the sultanas. Roll the dough out thickly and, using a small, round, crinkle-edge cutter, make 10 scones, laying them on a lightly greased non-stick baking tray. Brush with egg and cook until risen and golden brown (10-12 minutes). Cool on a wire rack and dust with icing sugar or a little flour.
