Ingredients
- 3 cups balsamic vinegar
- 3/4 cup flour
- 1/3 cup cornmeal
- 6 (4-oz.) tilapia fillets
- 1 tablespoon olive oil
- Freshly ground black pepper, to taste

Preparation
Step 1
In a small saucepan, add balsamic vinegar and simmer over medium heat until liquid is reduced by two-thirds, about 15 minutes (you are making a nice yummy syrup). Meanwhile, combine flour and cornmeal in a shallow dish or pie plate; dredge the tilapia in the flour mixture. Heat the oil in a large skillet over medium heat. Add the tilapia and cook for about 5 minutes per side or until fish is cooked through and flakes easily when tested with a fork. Serve fish drizzled with balsamic reduction and sprinkled with pepper.
SERVING SUGGESTION: Steamed red skinned potatoes and steamed asparagus.
VEGETARIAN: Use extra-firm tofu instead of fish.
KOSHER: No changes necessary.
GLUTEN FREE: Use arrowroot OR another gluten free thickener.
