Ingredients

  • 2 1/2 pounds sweet potatoes (about 3 or 4 large)
  • 4 tbsp (1/2 stick) butter
  • 2 tbsp heavy cream
  • 1 1/4 cup light brown sugar
  • 2 tbsp orange juice
  • 1 tsp ground cinnamon
  • 1/2 tsp allspice
  • 1/8 tsp salt
  • 2/3 cup pecans
  • 2 cups mimi marshmallows (optional)

Preparation

Step 1

Preheat oven to 350 degrees

Peel, cut and boil sweet potatoes until fork soft

Beat sweet potatoes, 2 tbsp butter, heavy cream, 1/4 cup brown sugar, orange juice, cinnamon, allspice and salt ("Sweet Potato Mixture")

In a separate bowl, combine the remaining 2 tbsp butter, remaining 1 cup brown sugar, pecan pieces and mini-marshmallows (if desired) ("Pecan Mixture")

Spoon Sweet Potato Mixture into 9" cake pan and dot with Pecan Mixture

Bake for 30 minutes
