Ingredients
- 1 tablespoon olive oil
- 1/4 cup chopped green onion
- 1 pound shrimp, peeled and deveined
- Pinch of chili powder
- 1/2 cup chili sauce
- 7 ounces canned artichoke hearts, drained and chopped
- Salt and pepper, to taste

Preparation
Step 1
Heat the oil in a large skillet over medium heat; add green onion and saute for 1 minute. Add shrimp and cook for 2 minutes. Add chili powder, chili sauce and artichoke hearts; cook for 3 minutes or until sauce is heated through; season with salt and pepper before serving.
LC SERVING SUGGESTION: Serve a big spinach salad on the side.
SERVING SUGGESTION: Add whole wheat couscous.
