Ingredients

  • 1 cup chopped onion
  • 4 cloves garlic, pressed
  • 2 medium russet potatoes, peeled and cubed
  • 1/8 teaspoon black pepper
  • 1 (14.5-oz.) can low sodium diced tomatoes
  • 1 (6-oz.) can low sodium tomato paste
  • 2 cups water
  • 2 (6-oz.) cans clams, un-drained
  • 2 tablespoons lemon juice
  • 8 ounces Linguine pasta
  • 1 tablespoon unsalted butter
  • 1/4 cup chopped parsley
  • 1/3 cup grated Parmesan cheese

Preparation

Step 1

In a slow cooker, combine onion, garlic, potatoes, pepper and water. Cover and cook on LOW for 7 to 8 hours or until vegetables are tender. Stir in diced tomatoes, tomato paste, clams and their juice and lemon juice. Cover and cook on LOW for 30 to 40 minutes longer or until clams are hot. Meanwhile, prepare the pasta according to package directions; drain, toss with butter and divide evenly in serving bowls. Ladle clam mixture into each bowl and top with parsley and cheese.

SERVING SUGGESTION: A big salad tossed with Easy Balsamic Vinaigrette (see recipe). Add some garlic toast.
GLUTEN FREE: Make sure diced tomatoes and tomato paste are gluten free. Use gluten free Linguine pasta.
