Ingredients
- 1/4 c. olive oil
- 2 onions, diced
- 6 cloves garlic, minced
- 3 jalapenos, seeded and minced
- 2 bell peppers, diced
- 1 T. salt
- 1/4 t. black pepper
- cayenne pepper, dash
- 2 qts. tomato puree (about 25 plum tomatoes, pureed in a blender)
- 1/4 c. vinegar
- 8 T. cilantro, diced
- 1/4 c. water or tomato juice

Step 1
Brown the onions in the olive oil in a dutch oven. Add the garlic, bell & jalapeno peppers. Stir for 10 minutes. Add the remaining ingredients and cook over a low heat for a few hours, stirring occasionally.
