Ingredients

  • MUSHROOMS IN SOUR CREAM SAUCE:
  • 4-6 slices white bread
  • 1 lb. ground chuck
  • 2 eggs, slightly beaten
  • 1 onion, grated
  • 1 tsp. grated Parmesan cheese
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 cup or more fresh bread crumbs
  • 1 tbsp. oil
  • 1 lb. fresh mushrooms, thinly slice
  • 1 medium onion, thinly sliced
  • 2 tbsp. butter
  • 1 cup sour cream
  • 1 tsp. flour
  • 1 tsp. powdered mushrooms, optional
  • 1/4 tsp. salt
  • 1 tsp. grated Parmesan cheese

Preparation

Step 1

Moisten bread slices with water, squeeze dry. Dice finely. Add bread to meat along with eggs, onion, cheese, alt and pepper. Blend well. Shape into 6 oval patties. Coat patties on all sides in bread crumbs. Press lightly to make crumbs adhere. Heat oil in skillet. Add patties and cook 5 minutes on each side. Serve with Mushrooms in Sour Cream Sauce.
Amount: 6 servings

SAUCE:
Place mushrooms in mixing bowl and pour boiling water over to cover. Let stand 10 minutes. In a saucepan, saute onion in butter. Drain mushrooms and add to onion. Cook, stirring occasionally, 5-10 munutes over low heat. Blend sour cream and flour, Stir into mushroom mixture. Add remaining ingredients and heat through. Do not boil. Serve over Russian Cutlets..
