Spicy Oat Crusted Chicken with Sunshine Salsa 0 Picture

Ingredients

  • Sunshine Salsa
  • 3/4 c prepared salsa
  • 3/4 c coarsely chopped orange sections
  • Chicken
  • 2 T canola oil
  • 1 T margarine, melted
  • 2 t chili powder
  • 1 t garlic powder
  • 1 t ground cumin
  • 3/4 t salt
  • 1 1/2 c quaker oats, uncooked
  • 1 egg, lightly beaten
  • 1 T water
  • 4 boneless skinless chicken breasts
  • chopped cilantro optional

Preparation

Step 1

Combine salsa and orange sections in small bowl, cover and chill.

Heat oven to 375. Line baking sheet with aluminum foil. Stir together oil, margarine, chili powder, garlic powder, and cumin and salt in flat shallow dish. Add oats, stirring until evenly moistened.

Beat egg and water with fork until frothy in second flat shallow dish. Dip chicken into egg mix, then coat completely in seasoned oats. Place chicken on foil lined baking sheet. Pat any extra oat mixture onto top of chicken.

Bake 30 minutes or until chicken is cooked through and oat coating is golden brown. Serve with Sunshine salsa and garnish with cilantro if desired.
