Ingredients

  • 2 medium yellow onions
  • 1 clove garlic
  • 3-4 pound boneless pot roast (or flank steak)
  • 1 1/2 cups dried fruit
  • 1 1/2 dried apple rings
  • 1 bay leaf
  • 3/4 c pale ale
  • 1 c water
  • (or substitute vegetable broth for ale and water)
  • 1/4 c packed brown sugar
  • 1/4 tsp ground cinnamon
  • 2 tsp salt
  • 1/4 tsp ground black pepper

Preparation

Step 1

1. Peel and slice onions about 1/4-inch thick. Peel and mince the garlic.

2. Place the onions in the bottom of the slow cooker. Top with roast. Cover with dried fruit and bay leaf. Mix the remaining ingredients and pour over roast. Cover and cook for 6-8 hours on low or 4 hours on high.

3. Remove bay leaf and serve.
