George's Chicken - Skinless Chicken Breast

Ingredients
- 4 chicken breast (cut in half length wise) or chicken tenders
- 1/2 head of garlic - peeled and chopped
- 2 tbps. dried oregano
- Coarse salt and freshly ground pepper to taste
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1/2 cup pitted prunes
- 1/4 cup pitted spanish green olives cut in half
- 1/4 cup capers with a bit of juice
- 3 bay leaves
- 1/2 cup brown sugar
- 1/2 cup white wine
- about a cup of fresh Italian parsley

Preparation
Step 1
Mix all ingredients together. Add chicken and mix again. Marinate over night. Cook in a shallow pan for 45 minutes to an hour at 350 F
Serve over rice.
***Note - I would half the brown sugar***
