Ingredients

  • 3 C dry rotini pasta
  • 2 t butter or margarine
  • 1 1/2 C chopped mushrooms
  • 1 C diced carrots
  • 1/2 C minced onions
  • 1 can cream of celery soup, undiluted
  • 1 C shredded sharp cheddar
  • 3/4 C milk
  • 1/4 C grated parmesan cheese
  • 3/4 t dried basil
  • 1/2 t dried oregano
  • 1/4 t black pepper
  • 2 C broccoli florets
  • 1/4 C minced red bell pepper

Preparation

Step 1

Cook rotini according to package directions. Drain well and place in a large bowl.

While pasta is cooking, prepare sauce. Melt butter in a medium saucepan over medium-high heat. Add mushrooms, carrots, and onions. Cook and stir until mushrooms are tender, about 4 minutes. Add soup, cheeses, milk, basil, oregano, and pepper. Reduce heat to medium. Cook until cheeses are melted. Stir in broccoli and remove from heat.

Pour broccoli mixture over pasta. Mix well. Spray a 9x13" pan with non-stick spray; pour pasta mixture in and spread evenly. Sprinkle with red pepper. Cover with foil and bake at 350 F for 30 minutes. Stir before serving.
