Ingredients
- 1 lb. bonesless chicken breast cut into 1" cubes
- 1 large onion, chopped
- 4 cups broccoli
- 1 14.5 oz. can small diced tomatoes, drained
- 1/4 c. scallion and chive cream cheese
- Olive Oil
- salt and pepper
- 1 Tbs. flour
- 1/2 tsp. dried Thyme
- Cooked Rice

Step 1
Saute chicken in 1 tbs. olive oil until browned. Remove from skillet. Reduce heat to medium and add 1 tsp. oil and add onion, salt and pepper and cook until soft. Add flour to skillet and cook 1 minute while stirring. Add broccoli, thyme and 1/2 c. water to skillet. Cover and cook until broccoli is crisp-tender. Remove cover and add chicken, salt, tomatoes and cream cheese to the pan. Stir until well blended. Serve over the rice.
