Ingredients
- 3 scallions, finely chopped
- 4 Tbsp vegetable oil
- 2 Tbsp minced fresh parsley
- 1 Tbsp each minced garlic, grated fresh ginger root and dry jerk seasoning blend
- 1 lime, zested and juiced
- 1 roasting chicken (about 6lbs)

Step 1
Heat oven to 350F. In bowl, combine first 6 ingredients, 1 Tbsp lime juice and 1/2 tsp lime zest. Rub herb mixture evenly over and under skin of chicken. Place chicken on rack set in roasting pan; tie legs together. Roast chicken 1 hr., 45 min., or until thermometer inserted in thigh, not touching bone, reads 170F. Let sit 10 min. before slicing.
