Chicken Quesadillas and Fiesta Rice 0 Picture

Ingredients

  • 1 pound boneless chicken breasts, cubed
  • 1 can Cheddar cheese soup
  • 1/2 cup chunky salsa or Picante Sauce
  • 10 each flour tortilla
  • Fiesta Rice
  • 1 can condensed chicken broth
  • 1/2 cup water
  • 1/2 cup chunky salsa
  • 2 cups uncooked minute rice

Preparation

Step 1

PREHEAT oven to 425. Cook chicken in nonstick skillet until done and juices evaporate, stirring often. Add soup and salsa and heat through.

SPREAD about 1/3 cup soup mixture on half of each tortilla to withing 1/2 inch of the edge. Moisten edge with water and fold over and seal. Place on 2 baking sheets. Bake 5 minutes or until hot. Serve with Fiesta rice.

FOR rice, heat chicken broth, water, and 1/2 cup of salsa in saucepan to boil. Stir in 2 cups uncooked minute rice. Cover and remove from heat. Let stand for 5 minutes and then fluff with a fork.
