Ingredients

  • Pork cutlets
  • 2 Tbs Butter
  • 2 Tbs Olive Oil
  • 8 oz Portobella Mushrooms
  • 1/2 Onion diced
  • 3 Cloves Garlic
  • 2 Tbs Flour
  • 1-1/2 c Beef stock
  • Salt & Pepper to taste

Step 1

Salt and pepper pork on both sides.

Melt butter in cast iron skillet on medium to medium-high heat. Add 2 Tbs olive oil so butter will not burn. Sear about 2-3 minutes on both sides. Remove pork. Reduce heat to medium, (add additional oil if needed) and add mushrooms to pan until juices release. Add diced onion and garlic and saute until translucent. Add flour and stir until a rue forms and no trace of flour is left and everything is coated. Stir in beef stock and bring to a boil. Reduce heat, add additional spices to taste and simmer until thickened. Add pork back in and simmer for about 3 minutes
