Ingredients
- 8 large eggs
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cups leftover spaghetti in red sauce (or any leftover pasta you may have)
- Kosher salt and freshly ground black pepper

Step 1
Heat oven to 350 degrees F.
Whisk together eggs, Parmesan and a pinch of salt and pepper together in a medium bowl until smooth.
Heat olive oil in a 10-inch nonstick oven-proof skillet pan over medium heat. Toss in the spaghetti and stir until it’s warm, about 1 to 2 minutes.
Stir the eggs into the spaghetti. Stir slowly for 2 minutes to let the bottom just set up. Place the skillet in the oven and bake until set, about 15 minutes.
Slice into wedges to serve.
