Ingredients

  • 1 (16 oz) package dried baby lima beans
  • 1 (16 oz) package dried black beans
  • 1 (16 oz) package dried black-eyed peas
  • 1 (16 oz) package dried French green lentils
  • 1 (16 oz) package dried green split peas
  • 1 (16 oz) package dried navy beans
  • 1 (16 oz) package dried pinto beans
  • 1 (16 oz) package dried red lentils
  • 1 (16 oz) package dried yellow split peas
  • 14 tsp dried parsley, divided
  • 7 tsp garlic powder, divided
  • 7 tsp dried minced onion, divided
  • 7 tsp chili powder, divided
  • 7 tsp smoked paprika, divided
  • 7 dried bay leaves, divided
  • 3-1/2 tsp dried oregano, divided
  • 3-1/2 tsp dried crushed rosemary, divided
  • 1-3/4 tsp celery seeds, divided

Preparation

Step 1

In a large bowl, combine all dried beans, peas, and lentils. Divide among 7 quart-sized canning jars (each portion will be about 2-3/4 cups). Seal jars with rims and lids.

Into each of 7 small jars or jewelry-sized resealable bags, combine 2 tsp dried parsley, 1 tsp garlic powder, 1 tsp dried onion, 1 tsp chili powder, 1 tsp paprika, 1 bay leaf, 1/2 tsp dried oregano, 1/2 tsp crushed rosemary, and 1/4 tsp celery seeds.

For each gift, put together 1 jar of beans and 1 container seasoning mix.

To prepare soup:

1 gift package Nine-Bean Soup Mix
Seasoning Mix
5 slices bacon, chopped
1 c chopped sweet onion
8 cup chicken or beef broth
2 cups water
2 (14.5 oz) cans fire-roasted diced tomatoes, drained
salt to taste

Rinse beans thoroughly.

In a stockpot, cook bacon over medium heat, stirring occasionally, until almost crisp. Add onion and cook for 6 minutes or until onion is translucent. Add rinsed beans, broth, water, tomatoes and seasoning packet to soup.

Bring to a boil over medium-high heat. Reduce heat and simmer, stirring occasionally, for 2 hours or until beans are tender. Add salt to taste, if desired.
