Ingredients

  • 1 9-inch pie shell
  • 1 cup of diced precooked chicken
  • 1 cup of precooked wild rice
  • 1 cup swiss cheese
  • 1/2 cup parmesan cheese
  • 1 cup of light sour cream
  • 1/2 medium yellow onion
  • 2 cloves of garlic
  • 1/3 of small to medium red bell pepper
  • 4 eggs
  • 1 tbsp olive oil
  • 1/2 cups of milk, half and half, or fat free half and half
  • 1/2 tsp of salt or to your liking
  • 1/4 tsp of pepper to taste
  • 1/4 tsp of ground mustard

Preparation

Step 1

Begin by partially baking the pie shell for 7 – 9 minutes at 350 degrees. (Pie crust may bubble while pre-baking, take a knife or fork and pop the bubbles).


While the pie shell is in the oven, chop the chicken into smaller pieces and set aside.


The remainder of your recipe will be created with your Vita-mix®! Place all of your ingredients in to the container, except for the onion, bell pepper, chicken, and rice, place the lid on firmly, and start the machine on variable speed 1, turn the dial to 10, and then flip the switch to high for 1 1/2 minutes.


Next, turn the machine back down to a variable speed 1 or 2 (pending how much texture you wish to remain) and then drop in the onion and bell pepper through the whole in the lid and it let it briefly get chopped up and circulated in to all of the contents. The last step is to turn the machine off, insert the diced chicken and rice through the whole in the lid and use the tamper to simply stir the final ingredients in to the recipe.


Once completely mixed, simply take your contents and pour it in the pie shell crust and then place the entire dish in the oven at 400 for 30 to 35 minutes, or until a knife inserted in center comes out clean. Let stand for 8 to 10 minutes before serving.
