Muffins, Strawberry Mini Muffins

Ingredients

• 2 cups Pillsbury Best all purpose flour
• 1/2 cup sugar
• 1 Tablespoon baking powder
• 1/2 teaspoon salt
• 3/4 ci ,o;l
• 1/3 cup vegetable oil
• 1 egg
• 1 cup chopped fresh strawberries
• Topping 2 Tablespoons of sugar

Preparation

Step 1

Preheat oven to 375 degrees F.

Spray 36 miniature muffin cups with nonstick cooking spray. Lightly spoon flour into measuring cup. Level off. Combine flour, 1/2 cup sugar, baking powder and salt. In small bowl combine milk, oil and egg; mix well. Add to dry ingredients; stir until moistened. Gently stir in strawberries. Spoon rounded tablespoon batter into each muffin cup; sprinkle 2 tablespoons sugar evenly over all. Bake 375 degrees for 12 to 16 minutes until light brown around the edges. carb 9 g. each
