Ingredients

  • 2 quarts water
  • 2 teaspoons salt
  • 1 tablespoon oil
  • 1/2 package long spaghetti 16 oz
  • 2 cups sliced fresh mushrooms
  • 1/4 cup butter or margarine
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 3/4 cup light cream
  • 3 tablespoons sherry if desired
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon salt
  • 1/8 teaspoon nutmeg
  • pepper
  • 3 cups cooked chicken or turkey, cubed

Step 1

HEAT oven to 350. Boil water and cook noodles.

IN Dutch oven, cook mushrooms in margarine until tender. Stir in flour. Add chicken broth; cook, stirring constantly, until sauce is thickened. Remove from heat; stir in cream, sherry, parsley, 1 teaspoon salt, nutmeg and pepper. Fold in chicken and cooked long spaghetti. Turn mixture into 13x9 pan. Sprinkle cheese over top and bake at 350 for 30 minutes or until heated through. Let stand 5 or 10 minutes before serving.
