- 1 - 2 sheets puff pastry
- 1 white onion, finely chopped
- creme fraiche
- lardon of bacon
- Cherry tomatoes
- Goat cheese
- basil

Step 1
Preheat oven to 375 ?
Saute white onion until soft, transluscent. Saute bacon/lardon until transluscnet. Cool onions and mix in creme fraiche to make a spread.
Roll out 9" round of puff pastry and cut with fluted tart rim. Spread onion/cream to thinly and thoroughly cover pastry. Distribute and gently press in bacon.
Place on cookie sheet and bake 30 minutes ? until puffed and golden.
With left over puff pastry: cut fluted 2-3" rounds (can freeze at this point). Slice tomatoes in half crosswise and gently press one half each into rounds. Dot tomatoes with goat cheese. Bake for 15 minutes or so. Sprinkle with basil chiffonade
Any leftover pieces of puff pastry, cut in 1.5 " strips and cut diagonally into 2" diamonds. Fry. Drain and sprinkle with grated parmesan when still hot.
