Ingredients
- 1 long European seedless cucumber, peeled and finely diced
- 1 cup plain nonfat yogurt
- 1 teaspoon ground white pepper
- 1 teaspoon salt
- 2 plum tomatoes, peeled and finely diced
- 1/4 cup finely diced zucchini
- 1/4 cup yellow corn kernels
- 1/4 cup jicama, peeled and finely diced, or water chestnuts
- 1 scallions, finely diced
- 1 tablespoon rice wine vinegar
- 1 tablespoon extra virgin olive oil
- 1 tablespoon basil, finely shredded
