Ingredients

  • 1/2 c. olive oil
  • 3 large red potatoes
  • 1 large egg
  • salt and pepper
  • 1 1/2 c. bread crumbs
  • 1 12oz. log of goat cheese
  • 1 Tbsp. white wine vinegar
  • 1 Tbsp. grainy or dijon mustard
  • 8 oz. greens

Step 1

Heat broiler. Brush a baking sheet with oil and set aside. Place potatoes in a medium saucepan, cover with cold water and bring to a boil. Simmer until fork tender about 20-25 mins. Rinse the potatoes under cold water until cool to the touch. In a shallow bowl, whisk egg with salt and pepper. Place breadcrumbs in another shallow bowl. Slice goat cheese into 8 rounds and pate each into a disk about 1/2" thick. Dip into egg, then breadcrumbs, coating evenly. Place on prepared baking sheet. In another bowl whisk together vinegar, mustard and salt and pepper. Slowly add 1/4 c. oil whisking to emulsify. Set aside. Brush disks lightly with remaining 1/4 c. oil and broil until golden and crisp about 5 mins. Toss greens and potatoes in the dressing. prepare salads and top each with two cheese disks.
