Ingredients

  • 2 tablespoons oil
  • 2 to 3 cloves garlic, chopped or powder
  • 3 pounds chicken
  • 1/2 cup dry white wine
  • 1/4 cup pale dry sherry
  • 1 green pepper, in strips
  • 1 red pepper, in strips
  • 1/4 to 1/3 lb mushrooms, sliced
  • 1 onion, coarsely chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons tarragon
  • 1 dash pepper
  • 1/2 cup black olives sliced

Step 1

In skillet add oil and garlic and heat. Salt chicken and brown 5-7 minutes. Remove from oil. Add onion to pan. Cook til soft. Add to skillet, wine, and scrape up brown bits. Stir. Add chicken, peppers, and mushrooms. Sprinkle with basil, tarragon, pepper, and olives. Pour sherry over top. Bring liquid halfway up pan adding wine and sherry. Cover and simmer 20-30 minutes. Better if made the day before.
