Pork Chops with Bourbon Mustard

Ingredients
- 2 chops 3/4" thick
- 3 Tbsp. butter
- 1 Tbsp. olive oil
- 3 Tbsp. bourbon
- 2 Tbsp. minced shallot
- 1 c. sliced mushrooms
- 1/8 tsp. dried thyme
- 1 Tbsp. dijon mustard
- 1/4 c. heavy cream
- 1 Tbsp. parsley

Preparation
Step 1
Salt and pepper chops. In large skillet, saute in 2 Tbsp. of the butter and the olive oil over medium heat. Heat until browned on both sides. Pour in bourbon and swirl in reduce to a glaze. Add the shallot and mushrooms, cover and cook 5 mins over medium high heat. Crush thyme and sprinkle over chops. Add mustard and cream and simmer for 25 mins. REmove chops and add remaining butter and swirl into sauce and pour over chops and sprinkle with parsley.
