East Company Chicken Casserole

Ingredients
- 8 boneless chicken breast halves (I only used 5, but kept the other ingredients the same)
- 1 (2-1/2) oz. package smoked beef (or jar of smoked beef)
- Cracked black pepper, garlic salt and onion salt to taste
- 8 slices uncooked bacon
- 1 can cream of chicken soup
- 1 8 oz. carton sour cream
- Fresh parsley (I used dried)
- Freshly ground pepper

Preparation
Step 1
Butter or spray with cooking spray a large oblong baking dish, then line the dish with smoked beef. Season chicken breast halves with pepper, garlic salt and onion salt. Wrap each piece with bacon. Place breasts on top of beef. Combine soup and sour cream and pour over chicken breasts. Sprinkle with parsley and pepper. Cover with foil and bake at 350 for 1-1/2 hours. Uncover, stir and spoon liquid over chicken. Let it cook a little longer. Serve with rice.
(Note: sometimes I cook this at 325 for 2 hours or more. The slower it cooks, the more tender the chicken. Serves 8)
