Ingredients
- 1.5 lb. ground beef
- 1 small onion
- 1 garlic clove, minced
- 1 pkg. taco seasoning mix
- 1 tsp. salt
- 1/2 tsp. pepper
- 9 5" corn tortillas
- 1/2 c. chicken broth
- 1/2 c. tomato sauce
- 1 10 oz. can enchilada sauce
- 1.5 c. shredded cheddar cheese
- 2 15 oz. cans pinto, black or kidney beans drained and rinsed
- 1.5 c. frozen or 1 11oz. can corn
- 1 can green chiles

Preparation
Step 1
Brush inside of slow cooker with oil or spray. Brown ground beef with onion and garlic over med-high heat for 8-10 minutes stirring frequently. Drain. Stir in taco seasoning mix, salt and pepper. Place 3 tortillas in the bottom of slow cooker. Top with beef, broth, and sauces. Sprinkle with 1/2 c. of the cheese. Layer 3 more tortillas, top with beans, corn and chiles and 1/2 c. cheese. Top with remaining 3 tortillas. Sprinkle remaining cheese. cook on high for 2.5-3 hours or on low for 6-7 hours. Uncover slow cooker for last 30 mins. Serve with sour cream.
