Ingredients

  • 1/4 cup butter
  • 2 tbsp. olive oil
  • 1 cup rice
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 3 1/2 cups hot chicken broth
  • 1/2 tsp. saffron
  • 3 tbsp. warm water
  • 1/2 cup grated Parmesan cheese

Preparation

Step 1

Melt 2 tbsp. butter with olive oil in a saucepan. When hot, stir in rice. Allow rice to turn pale gold. Stir with fork to keep from burning. Add onion and garlic. Saute a few seconds. Add 1 cup hot chicken broth. Cover pan and cook over low heat 10 to 15 minutes or until liquid is absorbed. Dissolve saffron in warm water. Add to rice along with remaining chicken broth. Stir with fork. Cover and cook until liquid is absorbed. Add 2 tbsp. butter and parmesan cheese. Serve immediately. Amount: 6 servings.
