Ingredients
- 2 boneless chicken breasts
- salt
- 1/2 c. mayo
- 2 tablespoons parsley
- 2 tablespoons lemon juice
- 2 teaspoons honey
- 1 honeycrisp or Fuji apple, cored and diced
- 2 ribs celery, sliced
- 1/2 small red onion, sliced
- 1/4 c. sliced almonds
- 6 c. mixed greens

Preparation
Step 1
Place chicken in a large pot and cover in cold salted water. Bring to a boil and reduce to a simmer. Cook until chicken is thouroughly cooked. Cool and dice.
In a small bowl, whisk together mayo, parsley, lemon juice, honey and 1/4 tsp salt.
In another bowl, toss together apples, onion, almonds and chicken. Pour dressing over and toss well.
Chill for 1 hour.
Toss with mixed greens and serve.
