Spaghetti with Creamy Clam Sauce

Ingredients
- FOR SAUCE:
- 8 oz dried spaghetti or linguine or 1 LB fresh linguine or other ribbon pasta
- 2 6-1/2oz cans minced clams
- half & half, light cream, or milk
- 1/2 C chopped onion
- 2 cloves garlic, minced
- 2 TBL butter or marg.
- 1/4 C flour
- 1/2 tsp dried basil or oregano, crushed
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 C snipped fresh parsley
- 1/4 C dry white wine
- 1/4 C grated parmesan cheese

Preparation
Step 1
in lg. saucepan or pasta pot bring 3 qts water to poiling
add pasta
reduce heat slightly
boil, uncovered for 8-12 min for dried pasta
or 1-1/2 - 2 min for fresh, or till al dente, stirring occasionally
(or cook, according to pkg. directions)
immediately drain
FOR SAUCE:
meanwhile drain claims reserving liquid
add enough half & half, light cream or milk to reserved liquid to make 1-3/4 C
in med. saucepan cook onion & garlic in hot butter or marg. for abt. 5 min or till onion is tender but not brown
stir in flour, basil or oregano, salt & pepper
add cream mixture all at once
cook & stir till thickened & bubbly
cook & stir for 1 min. more
stir in parsley, wine & clams
heat through
serve sauce over hot pasta
sprinkle w/ parmesan cheese
serve immediately
