EGG - Spinach Salad with Warm Bacon Dressing

Ingredients
- DRESSING
- 1/2 clove garlic, peeled and minced
- 1/2 teaspoon sugar
- 1/4 teaspoon Dijon mustard
- 1 1/2 tablespoons lemon juice
- 1/2 tablespoon bacon grease
- Salt & freshly ground black pepper
- SALAD
- 3 ounces baby spinach or spinach/arugula blend
- 4 fresh mushrooms, sliced
- 1 hard-cooked eggs, peeled and sliced
- 1/8 small red onion, peeled and sliced very thin into rings
- 2 strips microwave pork bacon or 4 strips microwave turkey bacon

Step 1
FOR THE DRESSING:
In a small jar, combine all dressing ingredients except the bacon fat. Set aside for the flavors to meld while prepping the salad.
FOR THE SALAD:
Combine the spinach, mushrooms and onion in a bowl and set aside.
TO SERVE:
Warm the bacon fat until hot and melted, then stir in the lemon mixture (it will sizzle). Toss the warm dressing with the salad until the leaves are evenly covered. Gently stir in the cooked bacon pieces, plate and top with the egg slices and serve.
